Davidson Plum Pudding

Cooking time 5 mins.
Serves 4 – 6
125gm suet mix
4 tbsp castor sugar
1 tsp baking powder
12 tbsp (heaped) plain flour
2 Davidson plums (diced)
Milk (amount to blend)
Pinch of salt
Mix all ingredients thoroughly in a bowl, adding small amounts of milk until the consistency of the mix will drop slowly from a spoon.
Place mix in a greased (non stick) 1 lt microwave proof bowl and cover with plastic wrap with a fold to allow for the pudding to rise.
Microwave on high for 4- 5 mins.
Drizzle with Davidson Plum sauce, serve with custard, cream or ice cream.
Macadamia Nut Chicken Wraps
Preparation time 10 mins
Cooking time 20 mins
340 grams chicken breast
1 green capsicum
1 red capsicum
2 small cooking onions
Pinch of salt and Black Pepper to taste
Desert spoon of Macadamia Nut Chutney per wrap
4 Tortilla Wraps
Slice chicken into small strips.
Peel and slice onions.
Slice capsicums into strips.
Gently fry chicken in hot oil over a low heat, adding salt and pepper to taste.
When chicken is cooked add capsicums and onions and continue cooking until soft.
When thoroughly cooked spoon into wraps and add the Macadamia Nut Chutney.
Serve with a mixed green salad.
Steak in Davidson Plum Sauce
Preparation time 5 mins
Cooking time 7 – 10 mins
4 Fillet steaks
Davidson Plum Sauce
Grill steaks to you liking, turning only once during cooking.
When plated drizzle with Davidson Plum Sauce.
Serve with scalloped potatoes or pasta and side vegetables of your choice.
Fish in Lemon Myrtle Dressing
Preparation time 2 min
Cooking time 6 mins
4 fish fillets
Lemon Myrtle Dressing
Brush fillets lightly with oil.
Season with black pepper and grill for approx. 3 mins each side.
When plated drizzle with Lemon Myrtle Dressing.
Serve with side salad of your choice.
